Easy S'more Brownies

I usually don’t bake on weeknights, but Tracy was heading home from an out of town trip and I wanted to make him a treat. With some basic summer fixings on hand, these S’more Brownies were a fast and easy treat to whip up.

These S’more Brownies include a graham cracker crust, followed by a brownie layer and topped with toasted marshmallows and chocolate chips. These come out as a sweet, rich and gooey treat that should satisfy the sweetest tooth.

These can be a bit messy to handle and while that’s pretty standard for s’mores, I cut these up and place in cupcake paper to make it a bit easier to handle.

This can also be a flexible recipe that you can adjust to fit your tastes or what you have one hand. Only graham crackers on hand and you don’t feel like crushing them? Then just layer the bottom of the pan with the whole crackers and pour the brownie batter on top before baking. No brownie box mix on hand? Whip up a homemade batch of basic brownie mix. No chocolate chips on hand? Drizzle with chocolate syrup or sauce, Would you rather skip the graham cracker crust all together? Than make the brownie layer and top with marshmallows, chocolate chips and sprinkle with graham cracker bits or crumbs. Or rather than use a 13x9 pan, try these in a cupcake pan. Be adventurous!

I usually make these with miniature marshmallows. I only had about a ½ bag of leftover chocolate chips and regular sized marshmallows on hand. I cut the marshmallows in half diagonally and placed cut side down on the brownies and sprinkled with all the chocolate chips I had. These marshmallows flattened a bit more than miniature marshmallows when cooling, but were a bit less messy and gooey to eat.

Easy S’more Brownies Recipe

Ingredients

  • 1-½ cups graham cracker crumbs
  • ⅓ cup sugar
  • 7 tablespoons butter, melted
  • 1 box of Brownie mix (for a 13x9 pan)
  • 2 eggs
  • ⅔ cup vegetable oil
  • ¾ cup water
  • ½-1 bag of marshmallows or miniature marshmallows
  • ½ bag of chocolate chips

Directions

Preheat oven to 350 degrees F. Grease a 13x9 pan or baking dish (I just rub it down with butter.) In a small bowl, combine graham cracker crumbs, sugar and butter. Firmly press the graham cracker mixture in the 13x9 dish. Bake for 8 minutes.

While graham cracker crumb crust bakes, in a medium to large bowl, combine brownie mix, eggs, water, and oil. Stir with spoon until combined, but don’t over mix.

When crust is done, remove from oven and pour brownie mix over the crust. Put back in oven and bake in oven and bake for 26-28 minutes or until toothpick inserted in middle comes out clean.

Remove from oven and sprinkle marshmallows and chocolate chips on top of baked brownies. If using large marshmallows, cut in half. Put back in oven for about 5 minutes or until marshmallows are a slightly toasted. You can switch on the broiler for this, but watch closely as it will toast fast.

Remove from oven and cool completely on rack.
